Bill & Ann's Favorite Recipes - Appetizers

Nachos

6 to 8 c. tortilla chips
4 c. shredded jack or mild Cheddar cheese
1 can (4 oz) whole California green chiles

Spread tortilla chips one layer deep (overlapping) in baking pan or cookie sheet. Sprinkle evenly with cheese and chiles. Bake uncovered at 400 degrees for about 5 minutes or until cheese melts. Serve immediately. Serves 6 to 8.


Cheese Crisps

Corn Tortillas - Fry in deep fat until very crisp. Line cookie sheet with paper towels and pat tortillas on it. Sprinkle grated cheese on tortillas and put under broiler until cheese melts. (It only takes a minute, so don't go away or you'll have a fire.) Delicious cold too.

Flour tortillas - Do not fry first. Saute briefly in skillet in small amount of oil or butter until tortilla starts to bubble and crisp. Turn over and do other side. Place on cookie sheet, sprinkle with grated cheese and broil until cheese melts.


Bacon Mushroom Crowns

40 medium mushrooms
1/2 lb. bacon, crisply cooked & crumbled
1 c. (4 oz) shredded Swiss cheese
1/2 c. butter or margarine, softened
1/2 c. finely crushed corn chips
2 cloves garlic, crushed
2 T. finely chopped onion
1 T. dry red wine

Remove stems from cleaned mushrooms; chop stems. Combine stems with remaining ingredients. Fill mushroom caps; place on baking sheet stuffing side up. Broil 5 to 7 minutes or until light brown and bubbly. Makes 40 appetizers.
