Nachos
6 to 8 c. tortilla chips
4 c. shredded jack or mild Cheddar cheese
1 can (4 oz) whole California green chiles

about 5 minutes or until cheese melts. Serve immediately. Serves 6 to 8.
Cheese Crisps
Corn Tortillas - Fry in deep fat until very crisp. Line cookie sheet with paper
towels and pat tortillas on it. Sprinkle grated cheese on tortillas and put under
broiler until cheese melts. (It only takes a minute, so don't go away or you'll
have a fire.) Delicious cold too.
Flour tortillas - Do not fry first. Saute briefly in skillet in small amount
of oil or butter until tortilla starts to bubble and crisp. Turn over and do other
side. Place on cookie sheet, sprinkle with grated cheese and broil until cheese
melts.
