Gazpacho

3 very ripe peeled tomatoes, chopped
1 c. tomato puree
1 c. catsup
2 c. tomato juice
Juice of 2 lemons
1 c. water
Several dashes Worcestershire sauce
2 diced large cucumbers
1 chopped large onion
1 diced green pepper
2 c. chopped garlic cloves
1/2 c. vegetable oil
3/4 c. white vinegar
1 T. MSG (optional)
Salt & Pepper to taste

Combine first seven ingredients in large kettle. Add rest and mix thoroughly. Serve cold. Add croutons if desired. Makes 2-1/2 quarts.


Sopa De Albondigas (Meatball Soup)

1 1/2 Pound Lean Chopped Beef (combine with pork-to total 1 1/2 pounds-if desired)
1 med. onion, chopped
1 clove garlic, minced
1 beaten egg
1 t. salt
1/2 t. crushed oregano
1/8 t. pepper
2 T. cooking oil
4 c. water
2 10-1/2 oz. can condensed beef broth
1 6 oz. can tomato paste
2 med. potatoes, peeled and cubed then cooked (al dente)
2 med. carrots, sliced then cooked (al dente)
1/4 c. snipped parsley

Mix first seven ingredients and form into small meatballs; brown lightly in oil Combine with additional ingredients, garnish with parsley.


"Like-Lipton" Onion Soup Mix

4 tsp. instant bouillon granules
8 tsp. minced dried onion
1 tsp. onion powder
1/4 tsp. bon appetit seasoning

This recipe equals 1 package onion soup mix.
